We invite you to register for the third year of our TE MANA LAMB challenge in partnership with The Staff Canteen. This is a fantastic opportunity to show off your creativity and own cooking style to the industry.

TE MANA LAMB is one of the world’s finest lambs and is a result of an 11 years+ scientific research programme. Over 500 genetic lines were tested & Ram 211 stood out as he had a high level of intramuscular fat and Omega-3.

16 founding farmers were chosen to raise TE MANA LAMB in New Zealand’s iconic hill and high country on the South Island. Our TE MANA LAMB is free range & grass fed with naturally elevated levels of Omega-3 due to the unique combination of new breed, rearing location & conditions. Our TE MANA LAMB finish grazing on Chicory herb pastures for the last 30 days which helps produce higher levels of Omega-3.

Once the entry process has ended 25 chefs will then be chosen to compete in this year’s challenge based upon your dish name, dish description, method, & ingredients. All 25 chefs will then receive two samples of TE MANA LAMB chosen in your submission.

Once you have received your samples you will then have a week to come up with your most innovative lamb dish using our TE MANA LAMB as the main focus of your dish. You will need to send us two pictures, by Monday 3rd August 10:00am 2020. All pictures will then be uploaded online for the voting period which will run from Thursday 6th August 10:00am to Monday 17th August 10:00am.

All eight finalists will be the chefs with the highest amounts of votes from our online voting system. The eight finalists will then be invited to take part in the final which is a live cooking competition where a panel of independent chef judges will announce the winner and runners up that evening. You must be available on Monday 14th September 2020 for the final if you make it through.

The winner of the competition will be given a place on our Pure South Discovery Series 2021 (Flights and accommodation will be included) where you will have the opportunity to visit our farms, cook with our produce and discover New Zealand.

2019

Ladislav (Lee) Poustevnik, head chef of Beales Gourmet was crowned winner of the 2019 TE MANA™ lamb challenge with his ‘Dish of the Habit’ (Duo of Lamb).

2018

John Skotidas, head chef from Mazi restaurant was crowned the winner of the 2018 TE MANA™ lamb challenge with his Lamb fillet and shredded lamb shoulder with miso, aubergine and onions.

Entry criteria

  • You must be one of the following Executive chef, Head chef, Sous chef or Chef de partie
  • You may only enter if you have a restaurant(s) / or work at a restaurant based within the Classic Fine Foods delivery areas. Please click here to see their delivery locations. Alternatively you can email temana2020@alliancenz.co.uk to see if they can deliver to you.
  • You must be 18 years old from the challenge start date or older
  • You must have a valid passport with no travel restrictions (to be able to travel to New Zealand if you win)
  • You must have a valid visa to be able to travel to New Zealand at the time of travel
  • You must be available between 9am – 6pm on Monday 14th September for the final cooking competition in London if you make it through to the final round
  • If you are the previous winner then you will not be allowed to enter

You will be required to pick one primary cut and one secondary cut from the following samples to create your dish. Please note all samples will be sent to your restaurant address. Please use both cuts to create ONE dish only.

About the final

The final is being held on Monday 14th September 2020 the following information should be taken into account when coming up with your TE MANA LAMB dish. All finalists will receive a judges tips sheet a few weeks before the final in order to help them prepare and plan.

  • Please use both cuts to create ONE dish only
  • All food should be washed, cooked and prepared on the final day within the time limit given.
  • All cuts of lamb must be cooked on the day of the competition.
  • All meat cuts will be provided for the final a week before.
  • Any pre-cooked items are not allowed.
  • Each contestant will have half an hour to set up their station.
  • Contestants will then have a 15-minute briefing from the judges where they can ask any questions that they may have.
  • You will then be given 2 hours to cook and present your dish within this time limit.
  • You will be required to create 4 identical dishes on the day.
  • The winner and runners up will be announced in the evening of that day.
